Ingredients

  • 1 1/2 lb. veal or chicken
  • 2 eggs, beaten
  • 2 c. bread crumbs
  • 1/2 c. Romano cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. chopped parsley
  • 2 cloves garlic, minced
  • 1/2 c. or more olive oil to fry

Method

  • Beat eggs in small bowl.
  • In a large bowl, make bread crumb mixture with bread crumbs, cheese, salt, pepper, parsley and garlic.
  • Mix well.
  • Dip chicken or veal into eggs, then put in bread crumb mixture until well coated.
  • Heat oil in frying pan. Add veal or chicken and cook about 2 to 3 minutes on each side. Drain on paper towel to remove excess oil.
