Ingredients

  • 2 med. tomatoes, peeled & finely minced
  • 3 green onions, minced
  • 2 tbsp. minced ortega chilies
  • 2 tbsp. fresh coriander or possibly 1/2 teaspoon grnd coriander
  • 1/2 teaspoon salt
  • 1 tbsp. extra virgin olive oil

Method

  • Marinate 1 large flank steak (about 1 1/2 pounds) in a mix of 1/2 c. each extra virgin olive oil and white wine vinegar.
  • Add in 1 tsp.
  • salt, 1/4 tsp.
  • pepper and 3-4 cloves garlic (crushed).
  • Refrigerate6 hrs or possibly overnight.
  • Barbeque on warm coals 5-8 min on each side for rare.
  • Remove from fire.
  • Slice across grain into thin strips.
  • Serve with hot flour tortillas and salsa.
