Ingredients

  • 2 cloves garlic, finely chopped
  • 2 tsp lemon zest, grated
  • 2 tbsp lemon juice
  • 2 tbsp light olive oil
  • Pepper and salt
  • 4 chicken breast fillets
  • Title:For the melon salsa
  • 1/4 small watermelon (about 1kg), peeled, seeded and chopped
  • 10 cherry tomatoes, quartered
  • 1 Lebanese cucumber, seeded and cut into 1cm pieces
  • 16 kalamata olives, pitted and halved
  • 1/2 tsp caster sugar
  • 1 tbsp red wine vinegar
  • 1-2 small red chillies, finely chopped
  • 2 tbsp extra virgin
  • olive oil
  • Baby salad leaves
  • Lemon wedges, to serve

Method

Combine garlic, lemon zest, juice and olive oil in a small bowl and season to taste, then brush over chicken.

For the melon salsa

Combine all ingredients, season to taste and toss gently.

Barbecue chicken over medium heat, brushing frequently with marinade and turning once, until cooked through.

To serve 

Serve chicken with watermelon salsa, salad leaves and lemon wedges.
