Ingredients

  • 750 g (1 lb 10 oz) baby potatoes, unpeeled
  • 2 tablespoons olive oil
  • 2 tablespoons thyme
  • sea salt, to serve

Method

1. Cut any large potatoes in half so that they are all the same size for even cooking. Boil, steam or microwave the potatoes until just tender. Drain and lightly dry with paper towels.

2. Put the potatoes in a large bowl and add the oil and thyme. Toss gently and leave for 1 hour.

3. Drain potatoes, reserving oil mixture. Cook the potatoes on a hot, lightly oiled barbecue grill plate or flat plate for 15 minutes, turning frequently and brushing with the remaining oil and thyme mixture, until golden brown. Sprinkle with 2 teaspoons crushed sea salt to serve.
