Ingredients

  • 1 whole chicken, cut
  • 1 medium onion
  • 1 (4 oz.) can tomato paste
  • oregano
  • thyme
  • salt and pepper
  • 1 (16 oz.) can tomatoes, stewed
  • 2 (16 oz.) cans tomato sauce
  • honey
  • basil
  • lemon pepper

Method

  • Boil chicken with onion on stove for 20 minutes.
  • Lightly season with salt and lemon pepper.
  • In a separate pot add can of stewed tomatoes, tomato sauce and tomato paste.
  • Stir.
  • Add honey, oregano, basil, thyme, pinch of black pepper and salt.
  • Season to taste.
  • Let simmer for 15 minutes, then put chicken in a lasagne pan and cover with sauce.
  • Cook in oven (350°) for 15 minutes or until chicken is tender.
  • Serve with cabbage and brown rice.
