Ingredients

  • 6 chicken breasts
  • 8 ounce. apricot preserves
  • 1 bottle Russian dressing
  • 1 pkg. dry onion soup mix

Method

  • Mix together the last 3 ingredients.
  • Place chicken in casserole and pour sauce over chicken.
  • Cook, covered at 350 degrees for 2 hrs.
  • Serve over white rice.
  • MICROWAVE VERSION: Place chicken in microwave-safe casserole with the thickest pcs of chicken facing the outside of the dish.
  • Combine last 3 ingredients for sauce, and pour over chicken.
  • Cover with wax paper and cook on high for 15 min.
  • Turn chicken over and baste with sauce.
  • Recover with wax paper and cook on high an additional 15 min.
