Ingredients

  • 1/2 cups Butter (soft)
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 1-1/2 cup All-purpose Flour
  • 1/2 cups Bread Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Salt
  • 1 cup Walnut Pieces
  • 3 whole Medium Bananas, Ripe

Method

  • Preheat the oven to 400°F. Prepare a muffin pan with baking spray.
  • In a mixer, combine the butter and sugar until fluffy. Add the eggs and vanilla and beat until fluffy.
  • In a separate bowl, combine the dry ingredients, including the walnuts. Add the dry ingredients and the walnuts to the mixing bowl, and partially combine.
  • Add the very ripe bananas and beat on high until the bananas and the rest of the ingredients have been well combined into a smooth batter.
  • Evenly scoop the muffin batter into the tin.
  • Bake for 15 minutes at 400°F.
