Ingredients

  • 1 c. sifted all-purpose flour
  • 1 c. unsifted white wheat flour
  • 3 Tbsp. sugar
  • 2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/4 c. margarine
  • 2 medium bananas, peeled and mashed (1 c.)
  • 1/2 c. buttermilk
  • 1 large egg
  • 1 tsp. vanilla extract

Method

  • Preheat oven to 350°.
  • Lightly grease with spray 9 1/4 x 5 1/4 x 2 3/4-inch loaf pan.
  • In large bowl combine flour, whole wheat flour, sugar, baking soda, cinnamon and nutmeg.
  • Melt margarine in a small saucepan.
  • Pour into bowl and whisk together with bananas, buttermilk, egg and vanilla.
  • Add to flour mixture and stir until dry ingredients are moistened.
  • Spoon batter into pan.
  • Bake for 50 minutes.
  • Place pan on a rack and cool for 10 minutes.
  • Remove loaf from pan.
