Ingredients

  • 2 small ripe bananas
  • 1 box yellow cake mix
  • 1 small pkg. banana or vanilla instant pudding and pie filling
  • 4 eggs
  • 1 c. water
  • 1/4 c. oil
  • 1/2 c. finely chopped nuts (optional)

Method

  • Put bananas in mixing bowl and beat well. Add remaining ingredients. Blend, then beat at medium speed with mixer for 2 minutes.
  • Pour into a well-greased and floured 10-inch tube or Bundt pan.
  • Bake at 350° for 65 minutes.
  • Cool in pan 15 minutes. Remove from pan and cool on rack.
  • Sprinkle with confectioners sugar, if desired. Very moist cake.
