Ingredients

  • 2 1/2 c. flour
  • 1 tsp. salt
  • 1 2/3 c. sugar
  • 1 1/4 tsp. baking powder
  • 1 1/4 tsp. baking soda
  • 2/3 c. shortening
  • 1 1/4 c. mashed bananas (approximately 3)
  • 2 eggs
  • 2/3 c. chopped nuts
  • 2/3 c. buttermilk

Method

  • In a large bowl mix together flour, salt, sugar, baking powder and baking soda.
  • Add shortening, 1/3 cup buttermilk and bananas. Beat for 2 minutes.
  • Add 1/3 cup buttermilk and eggs, beating for 2 minutes.
  • Fold in chopped nuts.
  • Pour into a 9 x 13-inch pan. Bake for 30 to 35 minutes at 350°.
