Ingredients

  • FOR THE MUFFINS:
  • 1-1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt
  • 3 whole Bananas, Mashed
  • 3/4 cups Sugar
  • 1 whole Egg, Lightly Beaten
  • 1/3 cups Butter Or Margarine, Melted
  • FOR THE TOPPING:
  • 1/3 cups Brown Sugar
  • 1 Tablespoon Flour
  • 1/8 teaspoons Cinnamon
  • 1 Tablespoon Butter, Cold

Method

  • Preheat oven to 375°F. Grease or line a 12-count muffin tin with paper liners. Set aside.
  • For the muffins:
  • In a medium-sized bowl, combine dry ingredients (flour through salt on the above list). In a separate mixing bowl, combine the bananas, sugar, egg and melted butter; mix. Mix the dry ingredients into the wet ingredients. Fill the muffin cups 3/4 full.
  • For the topping:
  • Combine the brown sugar, flour and cinnamon in a small bowl. Then cut in the cold butter until crumbly. Top the muffins with the crumbly mixture.
  • Bake at 375°F for 18-20 minutes.
