- FOR THE MUFFINS:
- 1-1/2 cup Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 3 whole Bananas, Mashed
- 3/4 cups Sugar
- 1 whole Egg, Lightly Beaten
- 1/3 cups Butter Or Margarine, Melted
- FOR THE TOPPING:
- 1/3 cups Brown Sugar
- 1 Tablespoon Flour
- 1/8 teaspoons Cinnamon
- 1 Tablespoon Butter, Cold
Method
- Preheat oven to 375°F. Grease or line a 12-count muffin tin with paper liners. Set aside.
- For the muffins:
- In a medium-sized bowl, combine dry ingredients (flour through salt on the above list). In a separate mixing bowl, combine the bananas, sugar, egg and melted butter; mix. Mix the dry ingredients into the wet ingredients. Fill the muffin cups 3/4 full.
- For the topping:
- Combine the brown sugar, flour and cinnamon in a small bowl. Then cut in the cold butter until crumbly. Top the muffins with the crumbly mixture.
- Bake at 375°F for 18-20 minutes.
