Ingredients

  • 3 c. flour
  • 2 1/2 c. sugar
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 1 1/2 c. vegetable oil
  • 3 eggs
  • 1 tsp. vanilla
  • 1 1/2 c. mashed ripe bananas
  • 1/2 c. buttermilk
  • 1 c. chopped nuts
  • 1 can flaked coconut

Method

  • In a large bowl, sift flour, sugar, soda and salt.
  • Make a well and add oil and eggs.
  • Mix well by hand.
  • Add vanilla and bananas.
  • Add buttermilk.
  • Mix well.
  • Add nuts and coconut.
  • Bake in a greased and floured tube pan at 350° for 1 hour and 10 minutes.
  • This can also be made in a 9 x 13-inch cake pan and baked for 40 to 45 minutes.
