Ingredients
- 2/3 c. shortening
- 1 2/3 c. sugar
- 1 tsp. soda
- 1 1/4 c. bananas, mashed
- 1/2 c. (2 large) eggs
- 2 1/2 c. sifted cake flour
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 2/3 c. buttermilk
- 2/3 c. chopped nuts
Method
- Stir shortening, just to soften.
- Sift in dry ingredients. Add bananas and half the buttermilk. Mix until all flour is dampened, then beat vigorously for 2 minutes.
- Add remaining buttermilk and eggs. Beat 2 minutes longer.
- Fold in nuts. Bake in 350° oven for 30 to 35 minutes in two 9-inch layer pans.
