Ingredients

  • 2/3 c. shortening
  • 1 2/3 c. sugar
  • 1 tsp. soda
  • 1 1/4 c. bananas, mashed
  • 1/2 c. (2 large) eggs
  • 2 1/2 c. sifted cake flour
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 2/3 c. buttermilk
  • 2/3 c. chopped nuts

Method

  • Stir shortening, just to soften.
  • Sift in dry ingredients. Add bananas and half the buttermilk. Mix until all flour is dampened, then beat vigorously for 2 minutes.
  • Add remaining buttermilk and eggs. Beat 2 minutes longer.
  • Fold in nuts. Bake in 350° oven for 30 to 35 minutes in two 9-inch layer pans.
