Ingredients

  • 3 ripe bananas
  • 1 c oats
  • 1/2 c milk
  • 1 c brown sugar
  • 1/2 c butter
  • 2 eggs
  • 2 c flour
  • 1 Tbls baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2-1 c chopped pecan (optional)
  • 1/2-1 c frozen raspberries or blueberries (optional)

Method

  • Mix mashed bananas, oats, milk. Set aside (15-20 minutes makes bread blend better)
  • Cream butter & sugar in mixer. add eggs and beat. Gently add wet to dry ingredients. stir in pecan, blueberries or raspberries as preferred or bake as is.
  • Pour into grease and floured pans.
  • Bake in preheated 350 degree oven
  • one regular loaf pan = 50-60 minutes
  • (or) 3 mini loaf pans = 25 minutes
  • (or) muffins = 12 minutes
  • Double the recipe to make 5 mini loaves
