Ingredients

  • Dry ingredients:
  • 4 c. flour
  • 4 t. baking powder
  • 1 t. baking soda
  • 1 t. nutmeg
  • 1 t. cinnamon
  • 1 t. salt
  • Other ingredients:
  • 1/2 c. light olive oil
  • 1 c. brown sugar or 1/2 c. Splenda brown sugar blend
  • 4 eggs
  • 4 mashed bananas
  • 1 c. fat-free sour cream

Method

  • Preheat the oven to 350 degrees. Spray 2 bread pans with cooking spray. Mix the dry ingredients together in one bowl. Beat the oil and sugar/Splenda together in another, larger bowl. Add the eggs and beat. Then add the bananas and sour cream and mix. Add the dry ingredients to the banana mixture a little at a time, while stirring. Pour into 2 bread pans. Bake approximately 45 minutes, or until a toothpick comes out clean.
