Ingredients
- 3/4 c. sugar
- 1/2 c. margarine or butter, softened
- 2 eggs
- 1 c. (2 medium) mashed ripe bananas
- 1/3 c. milk
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 1/2 c. chopped nuts (if desired)
- 1 tsp. baking soda
- 1/2 tsp. salt
Method
- Heat oven to 350°.
- Grease bottom only of 9 x 5-inch or 8 x 4-inch loaf pan.
- In a large bowl beat sugar and margarine until light and fluffy.
- Beat in eggs and blend in bananas, milk and vanilla.
- Lightly spoon flour into measuring cup; level off.
- In a small bowl, combine flour, nuts, soda and salt; mix well.
- Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan.
- Bake at 350° for 50 to 60 minutes or until done.
- Remove.
- Cool on wire rack.
- Wrap tightly and store in refrigerator.
