Ingredients

  • 3/4 c. sugar
  • 1/2 c. margarine or butter, softened
  • 2 eggs
  • 1 c. (2 medium) mashed ripe bananas
  • 1/3 c. milk
  • 1 tsp. vanilla
  • 2 c. all-purpose flour
  • 1/2 c. chopped nuts (if desired)
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Heat oven to 350°.
  • Grease bottom only of 9 x 5-inch or 8 x 4-inch loaf pan.
  • In a large bowl beat sugar and margarine until light and fluffy.
  • Beat in eggs and blend in bananas, milk and vanilla.
  • Lightly spoon flour into measuring cup; level off.
  • In a small bowl, combine flour, nuts, soda and salt; mix well.
  • Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan.
  • Bake at 350° for 50 to 60 minutes or until done.
  • Remove.
  • Cool on wire rack.
  • Wrap tightly and store in refrigerator.
