Ingredients

  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 c. mashed bananas
  • 1 c. chopped nuts (optional)

Method

  • In a small bowl, sift dry ingredients.
  • In a separate bowl, cream shortening and sugar.
  • Blend in eggs and mix well.
  • Blend in sifted dry ingredients, then fold in bananas and nuts.
  • Pour into a greased loaf pan.
  • Push batter up in corners, leaving center slightly hollow for a well rounded loaf.
  • Allow to stand for 20 minutes before baking.
  • Preheat oven to 350° and bake 60 to 70 minutes.
  • Remove from pan and let cool.
