Ingredients

  • 2 lb. fresh okra
  • butter
  • 1 1/2 lb. lean lamb, cubed
  • 2 c. water
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 large can tomato sauce
  • 1 lemon
  • 1 tsp. kuzbara (coriander seed)

Method

  • Wash okra; cut off tops of stem.
  • Fry or broil okra in a small amount of butter or oil.
  • Brown lamb in butter.
  • Add water, spices, tomato sauce and garlic.
  • Cook slowly in covered saucepan until meat is tender, stirring occasionally.
  • Add browned okra, juice of lemon and cook slowly 5 minutes.
  • Serve with rice (Shiriah).
