Ingredients

  • 3/4 lb. zucchini, scrubbed well and grated
  • 1 large onion, minced
  • 1 c. grated Cheddar cheese
  • 1 c. self-rising flour
  • 1/2 c. vegetable oil
  • 3 large eggs
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 3 slices lean bacon, minced

Method

  • In bowl, combine zucchini, onion and bacon and gently stir in the Cheddar cheese, flour, eggs, oil, salt and pepper.
  • Stir the mixture until it is combined well.
  • Turn mixture into a well buttered baking pan (10 x 6 x 2-inches).
  • Bake in preheated oven at 350° for 40 to 50 minutes or until golden brown.
  • Serves 6 to 8.
