Ingredients

  • 1 1/2 cups asiago cheese
  • 2 boxes Middle East couscous
  • 2 large chicken breasts, grilled and seasoned to taste
  • 4 tomatoes, diced
  • 1 cup basil, chopped finely
  • 1/2 loaf crusty wheat bread, thinly sliced
  • 1/8 cup extra-virgin olive oil

Method

  • Boil couscous. Chop chicken into bite-size pieces.
  • Once couscous is ready, mix with chicken, basil and tomatoes. Toast bread and lay along bottom of round casserole pan. Sprinkle with 1/4 cup of asiago.
  • Lay down 1 inch layer of couscous chicken mixture, and then sprinkle with more cheese. Continue until casserole container is nearly full.
  • Lay down another layer of freshly toasted bread, and sprinkle generously with cheese. Drizzle with olive oil. Bake in oven at 350 degrees until cheese on top is melted and golden brown (30-45 min).
