Ingredients

  • 1 lb. lean ground beef
  • 1/2 c. rolled oats
  • 1/3 c. finely chopped carrots
  • 1/3 c. finely chopped celery
  • 3 Tbsp. finely chopped onion
  • 3 Tbsp. finely chopped parsley
  • 1/2 c. tomato sauce
  • 1 egg, lightly beaten or 1/4 c. cholesterol-free egg substitute
  • 2 tsp. prepared mustard
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. chili powder

Method

  • Spray 5 x 9-inch loaf pan. In large bowl, combine beef, oats, carrots, celery, onion and parsley. Mix well. Combine tomato sauce, egg and seasoning. Combine meat mixture with tomato sauce mixture just until mixed. Lightly spoon into loaf pan. Bake in 375° oven for 50 to 60 minutes. Allow to stand for 5 minutes, then slice into 6 pieces.
