Ingredients
- 1 1/2 lb. fillet of sole
- 3/4 tsp. salt
- few grains of pepper
- 1/4 c. milk
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 c. milk
- 1 tsp. sherry flavoring
- 1/4 c. grated cheese
Method
- Place fish in greased baking dish. Sprinkle with salt and pepper.
- Add 1/2 cup milk.
- Bake in
- a 350° oven for 30 minutes. Melt butter and flour. Blend gradually.
- Add 1
- cup milk.
- Cook over low heat until smooth and thick, stirring constantly. Add sherry flavoring and cheese.
- Pour over fish and broil until golden. Serves 4 to 6.
