Ingredients

  • 4 medium baking potatoes
  • 1/4 c. vegetable oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme, oregano, sage or basil

Method

  • Preheat oven to 450°.
  • Peel potatoes and cut them into 1/8-inch thick slices.
  • Place slices in a bowl with oil, salt, pepper and thyme or other herbs.
  • Toss to mix well.
  • Place the slices on a baking sheet sprayed with Pam, spreading the slices so they overlay slightly.
  • Bake, uncovered, for about 20 minutes or longer if you prefer them crisper.
  • Serves 4.
