Ingredients

  • 1 orange, zested and juiced (about 1/4 c. juice)
  • 2 lb. sea bass, cut into 6 fillets
  • 1 1/2 lb. baby spinach, washed
  • 1 (10 oz.) pkg. mushrooms, sliced
  • 2 Tbsp. olive oil

Method

  • Heat oven to 450°.
  • In bowl, toss juice, 1 teaspoon zest and sea bass fillets together.
  • Marinate 15 minutes.
  • Meanwhile, toss together baby spinach, sliced mushrooms and olive oil.
  • Place in 9 x 13-inch baking dish coated with nonstick cooking spray.
  • Place fish fillets on top of spinach mixture.
  • Cover dish; bake 10 minutes.
  • Uncover; bake 5 minutes more or until fish is flaky and opaque.
  • Makes 6 servings.
