Ingredients
- 1 orange, zested and juiced (about 1/4 c. juice)
- 2 lb. sea bass, cut into 6 fillets
- 1 1/2 lb. baby spinach, washed
- 1 (10 oz.) pkg. mushrooms, sliced
- 2 Tbsp. olive oil
Method
- Heat oven to 450°.
- In bowl, toss juice, 1 teaspoon zest and sea bass fillets together.
- Marinate 15 minutes.
- Meanwhile, toss together baby spinach, sliced mushrooms and olive oil.
- Place in 9 x 13-inch baking dish coated with nonstick cooking spray.
- Place fish fillets on top of spinach mixture.
- Cover dish; bake 10 minutes.
- Uncover; bake 5 minutes more or until fish is flaky and opaque.
- Makes 6 servings.
