Ingredients
- 4 medium baking potatoes
- 1/2 c. sour cream
- 1/2 tsp. salt
- 1/2 c. grated Cheddar cheese
- paprika (a sprinkle)
Method
- Bake potatoes on center rack of 450° preheated oven until soft.
- Cut thin slice lengthwise from top of each potato.
- Scoop out flesh; keep shell.
- Throw away top of each potato.
- Mash flesh with mixer and add sour cream and salt.
- Mix until fluffy.
- (Add a little milk, if you prefer it thinner).
- Add cheese and mix.
