Ingredients

  • 4 large baking potatoes
  • 2/3 c. margarine
  • 2/3 c. plain flour
  • 6 c. milk
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 4 green onions, chopped
  • 12 slices bacon, cooked and crumbled
  • 1 1/4 c. shredded Cheddar cheese
  • 1 (8 oz.) sour cream

Method

  • Bake potatoes at 400° for 1 hour.
  • Cool slightly, cut potatoes in half and scoop out pulp.
  • Melt butter in a heavy saucepan over low heat.
  • Add flour stirring constantly until smooth.
  • Cook 1 minute.
  • Gradually add 6 cups of milk.
  • Cook over medium heat, stirring constantly until mixture is thickened and bubbly.
  • Add potato pulp and other ingredients except sour cream.
  • Cook until thoroughly heated.
  • Stir in sour cream.
  • Serve hot.
