Ingredients
- 4 large baking potatoes
- 2/3 c. margarine
- 2/3 c. plain flour
- 6 c. milk
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 4 green onions, chopped
- 12 slices bacon, cooked and crumbled
- 1 1/4 c. shredded Cheddar cheese
- 1 (8 oz.) sour cream
Method
- Bake potatoes at 400° for 1 hour.
- Cool slightly, cut potatoes in half and scoop out pulp.
- Melt butter in a heavy saucepan over low heat.
- Add flour stirring constantly until smooth.
- Cook 1 minute.
- Gradually add 6 cups of milk.
- Cook over medium heat, stirring constantly until mixture is thickened and bubbly.
- Add potato pulp and other ingredients except sour cream.
- Cook until thoroughly heated.
- Stir in sour cream.
- Serve hot.
