- 4 tomatoes, halved horizontally with a serrated knife
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- Freshly ground pepper to taste
- 2 tablespoons extra-virgin olive oil
Method
- Preheat oven to 375° F.
- Place tomatoes cut-side up on a baking sheet. Mix Parmesan, oregano, garlic, salt and pepper and top each tomato half. Drizzle each with olive oil.
- Bake, uncovered, until the topping is golden brown and the tomatoes are tender, about 30 minutes.
- Let sit for 10 minutes before serving as the tomatoes are hot.
