Ingredients

  • 4 tomatoes, halved horizontally with a serrated knife
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • Freshly ground pepper to taste
  • 2 tablespoons extra-virgin olive oil

Method

  • Preheat oven to 375° F.
  • Place tomatoes cut-side up on a baking sheet. Mix Parmesan, oregano, garlic, salt and pepper and top each tomato half. Drizzle each with olive oil.
  • Bake, uncovered, until the topping is golden brown and the tomatoes are tender, about 30 minutes.
  • Let sit for 10 minutes before serving as the tomatoes are hot.
