Ingredients

  • 1 can sliced potatoes, drained
  • 1 can whole green beans, drained
  • 1 lb. frozen fish fillets, thawed
  • 1/4 tsp. salt
  • 1 can cream of mushroom soup
  • 1 1/2 c. shredded Cheddar cheese
  • 2 Tbsp. chopped parsley
  • 2 tsp. grated lemon rind
  • tomato slices

Method

  • Arrange potatoes in bottom of buttered baking dish.
  • Layer beans over top.
  • Drain fish on paper towel.
  • Place fish over beans and sprinkle with salt.
  • In bowl, combine soup, cheese, parsley and lemon rind.
  • Spoon mixture over fish.
  • Bake at 350° for 30 minutes.
  • Top with tomato slices.
  • Return to oven and bake 10 more minutes.
  • Allow to stand 10 minutes before serving.
