- 1 can sliced potatoes, drained
- 1 can whole green beans, drained
- 1 lb. frozen fish fillets, thawed
- 1/4 tsp. salt
- 1 can cream of mushroom soup
- 1 1/2 c. shredded Cheddar cheese
- 2 Tbsp. chopped parsley
- 2 tsp. grated lemon rind
- tomato slices
Method
- Arrange potatoes in bottom of buttered baking dish.
- Layer beans over top.
- Drain fish on paper towel.
- Place fish over beans and sprinkle with salt.
- In bowl, combine soup, cheese, parsley and lemon rind.
- Spoon mixture over fish.
- Bake at 350° for 30 minutes.
- Top with tomato slices.
- Return to oven and bake 10 more minutes.
- Allow to stand 10 minutes before serving.
