Ingredients
- 2 c. uncooked regular rice
- 1 pkg. onion soup (1 3/8 oz.)
- 2 (2 to 3 lb.) broiler fryers (breasts or thighs are great)
- 1 can mushroom soup (undiluted)
- 3 c. water
- butter or margarine
Method
- Cut up chicken.
- Pepper to taste; no salt.
- Spread rice evenly in bottom of well-greased baking dish.
- Sprinkle with 1/2 of onion soup mix.
- Place chicken on rice.
- Sprinkle with remaining soup. Mix soup and water; blend well.
- Pour over chicken; dot with butter.
- Cover and bake at 325° for 2 hours or until chicken is done.
- If it gets too dry, add more water.
- Yields 8 to 10 servings.
