Ingredients

  • 2 c. uncooked regular rice
  • 1 pkg. onion soup (1 3/8 oz.)
  • 2 (2 to 3 lb.) broiler fryers (breasts or thighs are great)
  • 1 can mushroom soup (undiluted)
  • 3 c. water
  • butter or margarine

Method

  • Cut up chicken.
  • Pepper to taste; no salt.
  • Spread rice evenly in bottom of well-greased baking dish.
  • Sprinkle with 1/2 of onion soup mix.
  • Place chicken on rice.
  • Sprinkle with remaining soup. Mix soup and water; blend well.
  • Pour over chicken; dot with butter.
  • Cover and bake at 325° for 2 hours or until chicken is done.
  • If it gets too dry, add more water.
  • Yields 8 to 10 servings.
