Ingredients

  • 16 oz. fettucini or linguine
  • 10 oz. Brie cheese, skin removed
  • 1 lb. cherry tomatoes, cut in half
  • 1/2 c. olive oil
  • 1/2 c. fresh chopped basil
  • sprinkle of Romano or Parmesan cheese
  • fresh ground black pepper

Method

  • Boil macaroni al dente (a little hard).
  • While boiling, soften Brie and mix until smooth.
  • Add oil and basil and mix.
  • Strain macaroni, place on serving platter and lavishly pour Brie mixture over top; toss.
  • Add cherry tomatoes sprinkled with grated cheese and pepper to taste.
  • Serve with salad and garlic sticks.
  • Delish!
