Ingredients

  • 2 tablespoons olive oil
  • 1 onion thinly sliced
  • 1 cup mushrooms sliced
  • 2 cups cooked penne pasta chopped
  • 2 ounces chicken shredded barbecued
  • 4 large eggs
  • 1 cup 2% milk
  • 1/2 cup grated Parmesam
  • 1/4 cup all purpose flour
  • 2 tablespoons chopped parsley
  • salad to serve

Method

  • Preheat oven to 350°F. Lightly grease a 6 cup ovenproof dish. Heat oil in a large pan on high. Saute onion 1-2 mins, until tender. Add mushrooms and cook, stirring, 3-4 mins. Remove from heat. Stir in the pasta and chicken. Spoon into prepared dish.
  • In a bowl, beat together eggs, milk, Parmesan, flour and parsley. Season to taste. Pour over mushroom mixture. Bake 25-30 mins, or until set. Serve in wedges with salad.
