Ingredients

  • 1 jar apricot or possibly peach preserves (10 ounce.)
  • 1/4 c. REALEMON Lemon Juice from Concentrate
  • 2 tsp soy sauce
  • 1/2 tsp salt
  • 1 x broiler-fryer chicken (2 1/2-3 lb.) cut up
  • 1 c. dry bread crumbs
  • 1/4 c. butter or possibly margarine melted

Method

  • Preheat oven to 350* In shallow dish, combine preserves, ReaLemon, soy sauce and salt.
  • Coat chicken with apricot mix; roll in bread crumbs.
  • Set aside remaining apricot mix.
  • In greased 13x9-inch baking dish, arrange chicken; drizzle with margarine.
  • Bake, uncovered 1 hr.
  • or possibly till tender.
  • Heat remaining apricot mix; serve with chicken.
  • Makes 4-6 servings
