Ingredients
- 6 slices Bacon [diced]
- 2 Jalapenos [halved, seeded, thinly sliced]
- 1 tablespoon Flour
- 1 bottle Corona {or other Mexican beer}
- 2 cups Cheddar Cheese {extra sharp, grated}
- 8 ounces Cream Cheese [cut in small cubes]
- 4 ounces Green Chiles [diced, drained, 1 can]
Method
- 1. In a large saucepan set over medium heat, cook the bacon foe 3 - 5 minutes or until its starting to crisp. Add jalapenos, and continue cooking for another 2-3 minutes until jalapenos are softened.
- 2. Add flour and cook 1 minute, stirring constantly. Slowly add beer, whisking briskly to break up lumps. and bring to a simmer, stirring constantly.
- 3. Reduce heat to low. Add the cheddar cheese and cream cheese, simmer for 3 - 5 minutes longer, stirring constantly, until the dip is thick and smooth and bubbling hot.
- 4. Serve warm in a warming pot.
