Ingredients

  • 2 Cups any smallish pasta(elbow, shells,rotini,radiatore, whatever.)
  • 1/4 cup heavy cream (use less fat milk if you want)
  • 1/4 cup unsalted butter (use margarine if you suck)
  • 1 cup sharp cheddar (or colby)
  • 1/2 cup smooth melty cheese (havarti, muenster,fontina, whatever)
  • kosher salt
  • fresh ground pepper
  • Frank's(TM) Red Hot Sauce

Method

  • Boil 2 qts. water in medium sauce pan.
  • Add pasta, cook for about 6 min. Till just before al dente.
  • Move to a colander & drain.
  • Add butter to pan, heat until just melted.
  • Add Pasta, stir until coated.
  • Add heavy cream, stir.
  • Add creamy cheese, stirring constantly until a sauce forms.
  • Add cheddar, stirring until melted.
  • Season with salt & pepper, serve with Franks(TM) on the side.
