Ingredients

  • 1 egg
  • 3/4 lb. ground beef
  • 3/4 lb. ground pork
  • 1 1/3 C. hickory smoked barbecue sauce
  • 1/2 C. packaged dry bread crumbs or 1 1/2 C. soft bread crumbs for a softer textured meat loaf
  • 1/2 C. chopped fresh flat-leaf parsley
  • 2 Tbsp. grated onion
  • 1 clove garlic, finely chopped
  • 1/2 tsp. salt

Method

  • Heat oven to 350 degrees.
  • Beat egg in bowl.
  • Mix in beef, pork, 2/3 C. barbecue sauce, crumbs, parsley, onion, garlic, and salt.
  • Shape scant 3/4 C. mixture into 4 x 2 x 1 inch loaf, for total of 6. Place on jelly-roll pan.
  • Top each loaf with about 2 Tbsp. of remaining barbecue sauce.
  • Bake in 350 degree oven 30 minutes.
  • Let stand on pan 10 minutes.
  • Serve immediately or cool completely; refrigerate and serve cold.
