Ingredients
- 1 and 1/3 cups fresh or frozen corn kernels
- 1 avocado
- 1/2 cup chopped red onion
- juice of 1 lemon
- 2 tablespoons of fresh mint
- salt and pepper to taste
Method
- Cut avocado into a large dice. Defrost frozen corn for 2 minutes or shuck enough fresh cooked corn for 1 and 1/3 cups. Chop up red onion into semi-small dice. Combine all ingredients and season with salt and pepper to taste.
