Ingredients

  • 1 unbaked 9-inch pastry shell
  • 1 1/2 cups sugar
  • 1/3 cup butter or margarine, softened
  • 3 large eggs
  • 1 tablespoon grated lemon rind
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon lemon extract

Method

  • Line pastry shell with aluminum foil, and fill with pie weights or dried beans.
  • Bake at 425° for 7 minutes, and remove weights and foil.
  • Whisk together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into piecrust.
  • Bake at 350° for 30 minutes or until set. Cool on a wire rack.
