Ingredients
- 1 unbaked 9-inch pastry shell
- 1 1/2 cups sugar
- 1/3 cup butter or margarine, softened
- 3 large eggs
- 1 tablespoon grated lemon rind
- 1/4 cup fresh lemon juice
- 1/4 teaspoon salt
- 1/2 teaspoon lemon extract
Method
- Line pastry shell with aluminum foil, and fill with pie weights or dried beans.
- Bake at 425° for 7 minutes, and remove weights and foil.
- Whisk together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into piecrust.
- Bake at 350° for 30 minutes or until set. Cool on a wire rack.
