Ingredients

  • For Crust:
  • 1 11/2 cup crushed graham cracker crumbs
  • 1 cup sugar
  • 4 to 5 tablespoons butter melted
  • For Filling:
  • 3 8 ounce packages cream cheese softened
  • 1 cup sugar
  • 4 medium eggs
  • 1 pint sour cream
  • 2 tablespoons flour
  • 2 teaspoons vanilla
  • 1 teaspoon lemon juice
  • 1 cup heavy cream

Method

  • Grease bottom and sides of a 10 inch springform pan. Combine crust ingredients and pat down firmly in bottom of pan. Place in freezer while making rest of cake.
  • In largest bowl of an electric mixer beat filling ingredients in order listed adding each 1 by 1 and beating until thoroughly mixed. Pour into prepared pan and bake in a preheated oven at 325 degrees for 20 minutes, then lower heat to 300 degrees and bake for 40 minutes more. Turn off heat and let cake cool in closed oven for 1 hour. Cool on rack to room temperture, then refrigerate.
