Ingredients

  • 6 c. cooked, sliced, peeled potatoes
  • 6 bacon strips
  • 3/4 c. chopped onions
  • 2 Tbsp. flour
  • 2/3 c. cider vinegar
  • 1 1/3 c. water
  • 1/4 c. sugar
  • 1/8 tsp. pepper

Method

  • In a large skillet, fry bacon until crisp; remove; set aside. Cook onion in 3 tablespoons of bacon drippings until done.
  • Stir in flour, mix well.
  • Add water and vinegar; cook until slightly thickened.
  • Add sugar and cook until sugar dissolves.
  • Crumble bacon and add to mixture with potatoes.
  • Heat, stirring lightly to coat the potatoes.
  • Serve warm.
  • Serves 6 to 8.
