Ingredients
- 3 lb. London broil
- black pepper
- meat tenderizer
- 2 Tbsp. oil
- 3 Tbsp. margarine
Method
- Rub 1/4 teaspoon black pepper and 1 1/4 teaspoons tenderizer on each side of meat.
- In frypan, heat the oil.
- Let pan get hot (425°).
- Add the margarine.
- Cook 5 minutes on each side (cooking time for rare, which is best).
- Slice thinly; place on platter. Make au jus by adding 1/4 cup water.
- Scrape bottom of pan while simmering 2 to 3 minutes on high heat.
- Pour over meat and serve.
