- 1 lb green asparagus
- 1 red bell pepper, chopped
- 1/2 red onion, chopped
- 1 lime cut into slices
- 2 tsp lime juice
- 1 tsp chili powder
- 1 lb cooked shrimp
- 1 1/2 tbsp, olive oil
- 4 flour tortijas
Method
- In a bowl add shrimp, chili powder and lime juice
- In a large skillet, heat the olive oil. Add redonion, red bell pepper and asparagus. cook for 4 minutes.
- Add the ingredients from the bowl to the skillet. Cook for an additional 2 minutes.
- Add mixture to tortijas and garnish with lime slices.
