Ingredients
- 2 whole scallions, chopped
- 1 small onion, chopped
- 2 Tbsp. vegetable oil
- 1 small jar marinated artichokes, drained (but not washed)
- fresh green beans, cleaned and cut into equal lengths
- salt and pepper
- juice of 1/2 large lemon
- 1 carrot, sliced thin
- 1 Tbsp. butter
Method
- In a heavy frypan, saute scallions and onion in oil over very low heat.
- When transparent but not browned, add artichokes, beans, salt, pepper, lemon juice, butter and carrot.
- Cook over lowest possible heat (with cover on) for 25 to 30 minutes.
- Serves 4 to 6.
