Ingredients

  • 2 whole scallions, chopped
  • 1 small onion, chopped
  • 2 Tbsp. vegetable oil
  • 1 small jar marinated artichokes, drained (but not washed)
  • fresh green beans, cleaned and cut into equal lengths
  • salt and pepper
  • juice of 1/2 large lemon
  • 1 carrot, sliced thin
  • 1 Tbsp. butter

Method

  • In a heavy frypan, saute scallions and onion in oil over very low heat.
  • When transparent but not browned, add artichokes, beans, salt, pepper, lemon juice, butter and carrot.
  • Cook over lowest possible heat (with cover on) for 25 to 30 minutes.
  • Serves 4 to 6.
