Ingredients
- 2 (8 oz.) jars marinated artichoke hearts
- 1 small onion, finely chopped, or 1 bunch green onions
- 1 clove garlic, minced
- 4 eggs
- 1/4 c. bread crumbs
- 1/4 tsp. each: salt, pepper, oregano and hot seasoning
- 1/2 lb. sharp Cheddar cheese, shredded
- 2 Tbsp. minced parsley
Method
- Drain and chop artichokes.
- Saute onion and garlic.
- In a bowl, beat the eggs.
- Add bread crumbs and spices.
- Stir in cheese, parsley, onion and artichokes.
- Turn into a 7 x 11-inch pan.
- Bake at 325° for about 30 minutes.
- Let cool in pan, then cut into squares.
- Serve cold or reheat.
