Ingredients

  • 2 (8 oz.) jars marinated artichoke hearts
  • 1 small onion, finely chopped, or 1 bunch green onions
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. bread crumbs
  • 1/4 tsp. each: salt, pepper, oregano and hot seasoning
  • 1/2 lb. sharp Cheddar cheese, shredded
  • 2 Tbsp. minced parsley

Method

  • Drain and chop artichokes.
  • Saute onion and garlic.
  • In a bowl, beat the eggs.
  • Add bread crumbs and spices.
  • Stir in cheese, parsley, onion and artichokes.
  • Turn into a 7 x 11-inch pan.
  • Bake at 325° for about 30 minutes.
  • Let cool in pan, then cut into squares.
  • Serve cold or reheat.
