Ingredients
- 2 Tbsp. onion, finely chopped
- 3/4 c. mushrooms, thinly sliced
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 c. chicken broth
- 2 1/2 c. half and half
- 16 oz. artichoke hearts, drained and diced
- salt, cayenne pepper and Beau Monde seasoning to taste
Method
- Saute onion and mushrooms in butter for 5 minutes.
- Stir in flour; cook slowly for 2 minutes.
- Slowly add broth and half and half.
- Stir with whisk over low heat to thicken.
- Stir in artichokes and seasonings.
