Ingredients
- 1 can apricot halves
- 1 1/4 c. brown sugar
- 1 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/8 tsp. cinnamon
- 1 tsp. grated orange rind
- 5 medium size sweet potatoes, cooked
- 2 Tbsp. butter
- 4 c. small marshmallows
Method
- Drain apricots, reserving syrup.
- Combine sugar, cornstarch, salt, cinnamon and orange rind; blend well.
- Gradually add apricot syrup, stirring constantly.
- Bring to a boil over medium flame for two minutes.
- Add apricots and butter.
- Stir until butter is melted.
