Ingredients

  • 1 Tbsp. margarine
  • 1 c. minced green onion
  • 1 1/2 c. quick-cooking brown rice uncooked water to cook rice
  • 1/4 tsp salt if you like
  • 3 x fresh apricots peeled and quartered
  • 2 Tbsp. minced fresh parsley

Method

  • Saute/fry onion in margarine over medium heat till translucent/soft.
  • Add in rice and saute/fry till golden brown.
  • Add in water and salt.
  • Bring to a boil.
  • Reduce heat to low, cover and cook till liquid is absorbed.
  • Mix in apricots and parsley and heat through.
  • NOTES : Apricots are thought to have originated in the Middle East, where they are widely used in recipes like Apricot Pilaf.
  • Change the fruit with the season.
