Ingredients
- 1 Tbsp. margarine
- 1 c. minced green onion
- 1 1/2 c. quick-cooking brown rice uncooked water to cook rice
- 1/4 tsp salt if you like
- 3 x fresh apricots peeled and quartered
- 2 Tbsp. minced fresh parsley
Method
- Saute/fry onion in margarine over medium heat till translucent/soft.
- Add in rice and saute/fry till golden brown.
- Add in water and salt.
- Bring to a boil.
- Reduce heat to low, cover and cook till liquid is absorbed.
- Mix in apricots and parsley and heat through.
- NOTES : Apricots are thought to have originated in the Middle East, where they are widely used in recipes like Apricot Pilaf.
- Change the fruit with the season.
