Ingredients
- 1/2 c. coarsely chopped, dried apricots
- 6 slices day-old white bread
- 2 Tbsp. melted margarine
- 1/2 c. sugar
- 1 tsp. cinnamon
- 4 eggs
- 2 c. milk
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
Method
- Preheat oven to 350°.
- Pour hot water over apricots to cover. Let stand 5 minutes or until softened; drain.
- Grease a 1 1/2-quart baking dish.
- Cut crusts from bread.
- Brush with melted butter; sprinkle with apricots on each layer.
- Beat eggs just enough to blend thoroughly.
