Ingredients

  • 1/2 c. coarsely chopped, dried apricots
  • 6 slices day-old white bread
  • 2 Tbsp. melted margarine
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 4 eggs
  • 2 c. milk
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract

Method

  • Preheat oven to 350°.
  • Pour hot water over apricots to cover. Let stand 5 minutes or until softened; drain.
  • Grease a 1 1/2-quart baking dish.
  • Cut crusts from bread.
  • Brush with melted butter; sprinkle with apricots on each layer.
  • Beat eggs just enough to blend thoroughly.
