Ingredients

  • 1 c. dried apricots (about 1/2 pkg.)
  • 1 c. sugar
  • 2 Tbsp. shortening
  • 1 egg
  • 1/4 c. water
  • 1/2 c. orange juice
  • 2 c. sifted all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. chopped nuts

Method

  • Soak apricots for 30 minutes in warm water.
  • Mix sugar, shortening and egg thoroughly.
  • Stir in 1/4 cup water and orange juice.
  • Sift together flour, baking powder, baking soda and salt and stir into liquid to form batter.
  • Blend in chopped nuts and apricots.
  • Line bottom of pan with waxed paper.
  • Grease and flour sides of pan.
  • Pour in batter and let stand 15 minutes.
  • Bake at 350° for 55 minutes.
  • Makes 1 large loaf or 2 medium or 3 small loaves.
