Ingredients
- 1 cup coarsely chopped dried apple
- 12 cup butter, softened
- 12 cup brown sugar
- 12 cup granulated sugar
- 12 teaspoon vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 12 teaspoon baking powder
- 14 teaspoon salt
- 1 12 cups quick-cooking oats
Method
- Soak apples in boiling water for 20 minutes to rehydrate; drain.
- Heat oven to 350 degrees F. Lightly spray cookie sheets with vegetable pan spray.
- In a large bowl, cream butter with both surgars.
- Add vanilla and egg; blend well.
- Stir in flour, baking powder, salt, and oats; mix well.
- Stir in apples.
- Spray a 1 oz.
- cookie scoop or tablespoon with vegetable pan spray and drop dough on prepared pans.
- Bake 15-18 minutes or until edges are light golden brown.
