Ingredients

  • 1 cup coarsely chopped dried apple
  • 12 cup butter, softened
  • 12 cup brown sugar
  • 12 cup granulated sugar
  • 12 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 12 teaspoon baking powder
  • 14 teaspoon salt
  • 1 12 cups quick-cooking oats

Method

  • Soak apples in boiling water for 20 minutes to rehydrate; drain.
  • Heat oven to 350 degrees F. Lightly spray cookie sheets with vegetable pan spray.
  • In a large bowl, cream butter with both surgars.
  • Add vanilla and egg; blend well.
  • Stir in flour, baking powder, salt, and oats; mix well.
  • Stir in apples.
  • Spray a 1 oz.
  • cookie scoop or tablespoon with vegetable pan spray and drop dough on prepared pans.
  • Bake 15-18 minutes or until edges are light golden brown.
