Ingredients
- 3 eggs
- 1 1/4 c. Crisco oil
- 2 c. sugar
- 1 tsp. vanilla
- 2 1/2 c. self-rising flour
- 1 c. coconut
- 1 c. chopped pecans
- 2 medium apples, peeled and chopped
Method
- Preheat oven to 325° to 350°.
- Beat eggs, sugar and oil until creamy.
- Add flour slowly.
- Batter will be quite stiff.
- Fold in remaining ingredients.
- Fill muffin cups with batter, about 1/2 full.
- Bake for 25 to 30 minutes or until done.
- Yield: Approximately 36 muffins.
